Ragi oats porridge

Preparation time- 5 mins
Cooking time- 5 mins
Total time- 10 mins

Ingredients (for 4 servings):
  1. Ragi flour- 1 cup
  2. Oats- 1/2 cup
  3. Milk- 1 cup
  4. Sugar/Jaggery/Honey- as needed
  5. Water- as needed
Method:

Step 1: Take a pan with milk, add ragi flour, mix it well and boil it in low flame.

Step 2: When it boils, add oats and stir it well.

Step 3: After a few minutes, add sugar or powdered jaggery or honey and mix it well.

Step 4: Boil it for a few minutes till it becomes thick consistency. You can add water, if it requires.

Step 5: Finally, switch off the flame and serve it warm.


Now, healthy ragi oats porridge is ready

Mango Pickle


Mango Pickle

Preparation time- 12 hrs
Cooking time-10 mins
Total time- 12 hrs 10 mins

Ingredients (for 4 servings):
  1. Mango (chopped pieces)- 1 kg
  2. Fenugreek seeds-1 tablespoon
  3. Ginger(chopped pieces) - 50 gm
  4. Garlic (chopped pieces)- 50 gm
  5. Dried red chilly- 15 no.
  6. Vinegar (Acetic acid)- 100ml
  7. Salt- as needed
  8. Mustard - 4 tablespoon
  9. Sunflower Oil/ gingelly oil- 250 ml
  10. Chilly Powder- 8 tablespoon
  11. Turmeric powder-3 tablespoon
  12. Curry leaves- 30 no.
Method:

Step 1: Mix chopped pieces of mango with salt and turmeric powder. Keep it for 12 hrs in a glass jar.

Step 2: Take a pan, pour oil and warm it. Add mustard seeds, fenugreek seeds, red dried chilly and curry leaves.

Step 3: After a few minutes, add garlic and ginger, cook it for a minute.

Step 4: Add chilly powder and after a minute, switch off the flame. Then, add vinegar and mix it well.

Step 5: Finally, add mango pieces and mix it well.




Tips and warnings
  • Use glass jar always for storing pickle
  • Keep it in room temperature for 48 hrs and then keep it in fridge for months (I prefer this method).
  • If the pickle is covered with oil, you can keep it in room temperature for months, as the oil acts as a preservative. 
  • When you take the a portion of pickle from bottle, slant the jar and take the mango pieces without oil.
  • Cook it in a medium flame.
  • If it is a maiden attempt, start with a small quantity, because, it needs experience to bring the balance in sour, spicy and salty taste of mango pickle.

Tomato Dosa

Tomato Dosa

Preparation time- 9 hrs

Total time- 9 hrs 10 mins

Ingredients (for 4 servings):
  1. Idli Rice - 1 cup
  2. Urad Dal/ Black Gram Dal -1/2 cup
  3. Cooked Rice- 50 gm
  4. Salt- as needed
  5. Tomato - 1 no.
  6. Onion( Chopped pieces)- 100 gm
  7. Mustard - as needed
  8. Oil- 2 teaspoon
  9. Chilly Powder- 1/2 teaspoon
  10. Turmeric powder-1/4 teaspoon
  11. Curry leaves- 4-5 no.
Method:

Step 1:Soak the dal and rice separately for three hours. Grind (in wet grinder) the dal into smooth paste by adding enough water, then, add soaked rice and cooked rice slowly till it becomes smooth paste. Keep it in room temperature for 6 hrs.

Step 2: Heat a pan, add oil and mustard. After seasoning, add onion and deep fry it till it becomes golden brown color. Add Chilly powder, turmeric powder and curry leaves. Cook it in low flame. Then, add chopped tomatoes. Smash this mixture by using wooden spatula.

Step 3: Allow it to cool. Add this mixture into dosa batter and add salt as needed.

Step 4: Heat a pan and pour batter and spread it.

Appam

Appam/ Palappam

Preparation time-10 min
Cooking time-10 min
Total time- 20 min

Ingredients (for 4 servings):
  1. Rice Flour - 250 gm (Palappam Flour is recommended)
  2. Coconut Milk-1 cup
  3. Cooked Rice - 25 gm
  4. Salt - 1/2 teaspoon
  5. Sugar -1 teaspoon
  6. Yeast- 1 pinch
  7. Rava/Semolina- 50 gm
Method:

Step 1: Take warm milk, add yeast and half teaspoon of sugar, stir it well and keep it for 30 minutes.

Step 2: By the time, cook semolina till it becomes a thick and allow it cool.

Step 3:Mix rice flour, coconut milk, cooked semolina, yeast with warm milk, salt and sugar. Stir it well.

Step 4: Take this mixture in mixer grinder,add cooked rice and grind it by using pulse button.

Step 5: Keep it for 10-12 hrs. 

Step 6: Take "Appachatti", keep it in a low flame and apply oil. Pour the batter in the middle of the appachatti, take it in your hands and rotate the appachatti twice. Then, this batter will spread as a thin sheet into outer portion of the appachatti.

Step 7: Cover it with a lid, heat it in a medium flame for 2-3 mins. Open the lid and using wood spatula take the appams.

  • Batter should be medium loose
         Now, warm palappam is ready
