Onam Sadhya/ Sadhya
Sadhya includes a variety of dishes traditionally served on banana leaves especially occasions like onam, festivals, and marriage. It is served with around 25 dishes includes a wide variety of vegetables, fruits, cereals, and millets, which gives balanced nutrition for all age groups. It includes rice, curry, pickles, porridges, and fruits. If you are able to plan properly, you can alone prepare a sadhya at home. 
  • Decide how many people to be served
  • Prepare pickles in advance
  • Prepare curry dishes in minimum quantity to avoid wastage of foods.
  • Cut vegetables based on the dishes at first
  • Grate coconut for pachadi and payasam
  • Cook rice based on the number of people
  • You can grind coconut paste for all pachadi, erissery, kalan, kitchadi and avial too
  • Cook dal for rasam, sambar and dal curry
  • Extract coconut milk for payasam and olan

Preparation time- 5 mins
Cooking time-  5 mins 
Total time- 10 mins

Please be noted that you have to soak lemon slices for fermentation. Wash lemon very well and keep it for drying. Then, cut into pieces, put it in glass jar with turmeric powder and salt. Mix it with a dry spoon. Avoid contact with water. Keep it closed for one month and in between, you have to shake the jar very well.

Ingredients :
  1. Fermented lemon- 100 gm
  2. Gingely Oil- 50ml
  3. Mustard seeds- 1 tsp
  4. Turmeric powder- 1 tsp
  5. Chili powder- 2 tsp
  6. Garlic- 20 no.
  7. Ginger- 1 no. (Chopped) 
  8. Salt- as needed
  9. Vinegar- as needed 
Method:

Step 1: Pour oil in a pan and warm it on medium flame. Add mustard seeds, after a few seconds, add garlic, ginger and curry leaves, and fry it well. Add turmeric powder and chili powder and sort it well for a few seconds. Add lemon pieces and salt, mix it nicely.

Step 2: Do not cover with a lid. Switch off the flame. Add vinegar and mix it well. You are able to preserve Vitamin C, as you are not cooking the lemon slices.

Tips and warnings

  • Keep it in a air tight glass jar
  • Use dry spoon for serving
  • Avoid contact with water

Ingredients :
  1. Finely chopped carrot and bitter gourd- 100 gm each
  2. Gingely Oil- 50ml
  3. Mustard seeds- 1 tsp
  4. Turmeric powder- 1 tsp
  5. Chili green- 3 no. (chopped)
  6. Garlic- 20 no.
  7. Ginger- 1 no. (Chopped) 
  8. Salt- as needed
  9. Vinegar- as needed 
Method:

Step 1: Pour oil in a pan and warm it on medium flame. Add mustard seeds, after a few seconds, add garlic, ginger and curry leaves, and fry it well. Add turmeric powder and green chili and sort it well for a few seconds. Add carrot, bitter gourd pieces and salt, mix it nicely.

Step 2: Let it cooked for a few minutes, in between stir it well. Do not cover with a lid. Switch off the flame. Add vinegar and mix it well.

Tips and warnings

  • Keep it in a air tight glass jar
  • Use dry spoon for serving
  • Avoid contact with water 
  • Shake the jar bottle in between, in order to coat vinegar and oil very well.

  5. Tumeric powder- 1 tsp
  6. Chili powder- 2 tsp
  7. Salt- as needed 
  8. Curd-100 ml 
Method:

Step 1: Pour oil in a pan and warm it on medium flame. Add mustard seeds, after a few seconds, add chopped onion, beetroot, curry leaves, turmeric powder, chili powder and salt, and stir it well. Pour 100 ml of water for cooking.

Let it cooked for a few minutes by covering with a lid, in between stir it well. Switch off the flame, when it gets cool, add curd and mix it well.
