Wheat sponge cake- refined flour free/heart healthy and home made cake for all age groups

Preparation time- 10 mins
Cooking time-  20mins 
Total time- 30mins

Ingredients :
  1. Corn flour-3 tsp
  2. Wheat flour- 1 cup
  3. Baking powder-1 tsp
  4. Salt-1/2 tsp
  5. Egg-3 no.
  6. Powdered sugar- 1 cup
  7. Vanilla essence-1 tsp
  8. Butter- 20 gm
Method:
    Step 1: Take wheat flour, corn flour, baking powder and salt in a strainer, sift it two times and keep it aside.

    Step 2: In a bowl, beat sugar and butter using a handheld electric mixer. Then, add eggs slowly one by one and beat it. Add vanilla essence and beat it. Add the strained powder and mix it well. 

    Step 3: Take cake pan, apply butter liberally and dust it with maida and spread butter paper. Pour the prepared mixture into the cake pan and tap it on both sides to expel the air bubbles.

    Step 5: Preheat the oven at 180 Degree Celsius and bake the cake in conventional mode at 180 Degree Celsius for 25 minutes. After 25 minutes, insert a long stick into the baked cake and withdraw it. If the stick is sticky, you have to bake it for another 5 minutes.

    Step 6: Take the pan from the oven and allow it to cool.

    This cake is very soft and even if you keep it in a refrigerator for 2-3 days, still it will be very soft....really!!

    Ingredients :
    1. All purpose flour/Maida- 100 gm
    2. Baking powder-1 tsp
    3. Salt-1/2 tsp
    4. Egg- 1 no.
    5. Sugar- 1/2 cup
    6. Elakka/ Elachi/Cardamom- 2 no.
    Method:
      Step 1: Take maida, baking powder and salt in a strainer, sift it two times and keep it aside.

      Step 2: In a mixer jar, put sugar and cardamom and powder it. In a bowl, mix egg and powdered sugar well. 

      Step 3: Once the sugar dissolves in the mixture and put the dry ingredients and mix it well like a dough form and make desirable shapes of dough and keep it aside.

      Step 4: Warm oil on the medium flame and deep fry the cake rolls.

      1. Corn flour-50 gm
      2. All purpose flour/Maida- 100 gm
      3. Baking powder-1 tsp

      6. Sugar- 1/2 cup
      7. Elakka/ Elachi/Cardamom- 2 no.
      8. Butter- 20 gm
      Method:

        Step 3: Once the sugar dissolves in the mixture and pour into dry ingredients and mix it well like a dough form and make desirable shapes of dough and keep it aside.

        Step 4: Warm oil on the medium flame and deep fry the cake rolls.

        Preparation time- 5 minutes

        Ingredients (for 4 servings):

        1. Wheat flour- 1 cup
        2. Boiled banana (Nendran)- 1 no.
        3. Salt- as needed
        4. Warm water- as needed to prepare a dough 
        Method:

        Step 1: In a mixer jar, grind boiled banana as a paste.

        Step 2: In a bowl, put flour, add salt and banana paste and mix it well. Then add water slowly and mix it well till the entire flour is wet. Do not add extra flour and knead it for 5-7 minutes. Then, take a portion of dough in the hand and make lemon sized balls.


        Step 3: On a flat surface, sprinkle refined flour, take a dough ball and spread it with a chapathi roll. Take a pan and keep it on the low flame. Keep the flat chapathi on pan on one side and after a few minutes, turn to another side. Serve as lukewarm with sauce.

        Tapioca masala/Kappa ularthiyathu
        Preparation time- 5 mins
        Cooking time-   10 mins 
        Total time- 10 mins

        Ingredients :
        1. Chopped tapioca- 500 gm
        2. Finely chopped onion- 50 gm
        3. Oil- 3 tsp
        4. Mustard seeds- 1 tsp
        5. Garlic and ginger crushed- 1 tsp each
        6. Tumeric powder- 1 tsp
        7. Chili powder- 2 ntsp.
        8. Salt- as needed 
        9. Dried chili- 1 no. 
        10. Curry leaves- as needed 
        Method:

        Step 1: Wash chopped tapioca well. In a bowl, pour three glasses of water and add tapioca and allow it to boil on medium flame. After five minutes, check the status of tapioca. A cooked tapioca should be soft like cotton and have a feathery appearance. 

        "It depends on the variety of tapioca. To select a good quality of tapioca, you have to keep some unique features in your mind. You can go for the tapioca, which is firm, fresh and the outside skin will be red in color and dry in nature."

        Step 2: After that drain the water and keep it aside. Take a pan, pour oil, splutter mustard seeds, red chili, and curry leaves. Add onion, garlic, and ginger and sort it well. When it becomes golden brown color, add turmeric and chili powder and mix it well. Then, add tapioca and salt, and mix it well.

        Let it cooked for a few minutes by open, in between stir it well.

        Step 2: After 30 minutes, take a pan, pour oil and warm it on medium flame. After a few minutes, take the portions of the mixture and fry it deeply till it becomes crispy. 

        Step 3: Take a plate, spread a towel or tissue paper and keep the fried onion balls to absorb excess oil.

        Steamed veg masala momos with the secret ingredient to bring spicy outlet momos to home

        Ingredients for veg masala momos:
        For dough
        1. Rice flour- 1 cup
        2. Boiling water- as needed
        3. Salt- 1 tsp
        For filling

        1. Oil- 1 tsp (Prefer Rice bran oil)
        2. Cumin seeds- 1/2 tsp
        3. Chopped onion- 1 no.
        4. Garlic and ginger- 1 tsp
        5. Turmeric powder- 1/2 tsp
        6. Chili powder-1 tsp (prefer Kashmiri chili powder)
        7. Garam masala- 1/2 tsp
        8. Beans chopped- 1/2 cup
        9. Carrot chopped- 1/2 cup
        10. Boiled potato chopped- 1/2 cup
        11. Green peas- 15 no.
        12. Chopped cabbage and capsicum- 1/2 cup (optional)
        13. Grated cheese- 1/2 cup (this is the secret ingredient to make momos very soft and pulpy). 

        Method:

        Step 1: Pour oil into a pan and warm it on medium flame. Add cumin seeds, ginger, garlic, and onion. Stir it well. After a few minutes, add all powders, mix it well and then add all vegetables. Cook it for a few minutes with and without covering a lid. Let it cool and keep it aside.

        Step 2: Take rice flour and salt, pour boiling water, mix it well with a spoon. You try to knead the dough with hand for three minutes. Take a portion of dough, spread it on your hand and fill with the mixture and grated cheese (this is the secret ingredient to make momos very soft and pulpy).

        Step 3: Take steamer, pour water and boil it on high flame. When steam comes, keep all momos in the steamer and cook it for 10 minutes. After that take the momos outside and allow it to cool.

        Total time- 11 mins

        Ingredients :

        1. Puttu powder- 1 cup
        2. Sugar- 1 Tsp
        3. Salt-1/2 Tsp
        4. Grated coconut- 10 Tsp
        5. Water at room temperature- as needed
        Method:

        Step 1: Take a bowl, mix all dry ingredients well, sprinkle water frequently and mix it well. The aim is to get wet flour without any lumps. Keep it for 15 minutes.

        Step 2: Take a pressure cooker without pressure regulator, pour a cup of water and keep it on high flame.

        Step 3: Take puttu mold, spread a layer of coconut and put wet flour. If the flour is not moist enough, you can sprinkle water and mix it well. 

        Step 4: When water gets boiling, you can keep puttu mold on the vent tube and wait till steam comes and then, you allow it to cook in steam for six minutes. Serve immediately as warm. (This is secret of keeping puttu as soft and moist)

        Ingredients for Soft and crispy uzhunnu vada :
        1. Urad dal- 200 gm
        2. Fenugreek seeds- 4 no. ((Secret ingredient and makes a lot of difference to the dish)
        3. Sambar onion- 5 no. (sliced finely)
        4. Green chili- 1 no.  (sliced finely)
        5. Curry leaves- as needed (sliced finely)
        6. Ginger- 1 tsp (finely chopped)
        7. Asafoetida- 1/2 tsp (optional)
        8. Salt- as needed  
        Method:

        Step 1: Soak the urad dal and fenugreek seeds in water 4-6 hours and keep it in a strainer to drain water for 10 minutes. In a mixer jar, take soaked items and grind it as paste without adding water. You can keep this mixture in an airtight container in the fridge for two days.

        Step 2: Add sliced onion, chili, curry leaves, ginger and salt to mixture and mix it well. Take a pan, pour oil when it gets warm on medium flame.

        Step 3:Take a portion in your wet hand and press it gently in the middle to get a hole to get the desired shape. Then, put it the oil. After 3-4minutes, turn it to another side. Serve as warm.

        Ingredients for Crispy and tasty parippu vada:
        1. White chana/Kabuli chana-200gm (Secret ingredient and makes a lot of difference to the dish)
        2. Sambar onion- 5 no. (sliced finely)
        3. Green chili- 1 no.  (sliced finely)
        4. Curry leaves- as needed (sliced finely)
        5. Kashmiri chili powder- 1/2 tsp
        6. Salt- as needed  
        Method:

        Step 1: Soak the chana in water 6-8 hours and keep it in a strainer to drain water for 10 minutes. In a mixer jar, take chana and crush it by keeping pulse mode (in reverse direction) in mixer grinder for 5-6 times. You can keep this mixture in an airtight container in the fridge for two days.

        Step 2: Add sliced onion, chili, curry leaves, chili powder and salt to chana mixture and mix it well. Take a portion in your hand and press it gently to get the desired shape.

        Step 3: Take a pan, pour oil when it gets warm on medium flame, put chana molds. After 2-3 minutes, turn it to another side. Serve as warm.
