Puttu Kadala


Puttu and Kadala Curry

Preparation time- 10 mins
Cooking time-20 mins
Total time- 30 mins

Ingredients (for 4 servings):

For Puttu :
  1. Coarse rice flour-250 gm
  2. Grated coconut-50 gm
  3. Salt- as needed
  4. Sugar- 1 pinch
  5. Warm water- as needed
Method:

Step 1: Sprinkle warm water,salt and sugar on rice flour and mix it with hand very well. Keep it aside for 15 mins.

Step 2: Boil water in puttu maker and fill the wet flour inside. Steam it for 10 mins. After 10 mins, switch off the flame and take out the puttu from puttu maker and allow it to cool.

For Kadala Curry :
  1. Soaked channa/ Black Bengal gram (for 6-7 hrs)- 100 gm
  2. Coconut milk - 200 ml
  3. Oil-3 Table spoon
  4. Mustard- 1 Teaspoon
  5. Dried Red chilies- 3 pieces
  6. Onion chopped- 1 no.
  7. Curry leaves- 10 no.
  8. Chilly powder- 2 Teaspoon
  9. Turmeric powder- 1 Teaspoon
  10. Coriander powder- 3 Teaspoon
  11. Garam masala- 1/2 Teaspoon
  12. Tomato- 1 no.
  13. Coriander leaves-3 no.
  14. Salt- as needed
Method:

Step 1: Cook soaked channa with salt in pressure cooker till 3 whistles and keep it aside.

Step 2: Take a pan, warm oil in low flame, add mustard, dried red chilies, curry leaves and onion and fry it deeply until it becomes golden brown color.

Step 3:Then add chilly powder, turmeric powder, coriander powder and garam masala and mix it well. After a few  minutes, add chopped tomato.

Step 4: Then, add cooked channa, mix it well and allow it to boil for a minute. Finally add coconut milk and salt, boil it for a minute and sprinkle chopped coriander leaves. Switch off the flame.


Tips and warnings
  • Don't forget to take out the puttu from puttu maker, other wise, it will not be soft to eat.
  • You can try with grinded paste of coconut, it will give thick gravy curry.
Now, tasty puttu and kadala curry is ready for breakfast!

Preparation time- 5 mins

Total time- 10 mins

Ingredients (for 4 servings):
  1. Ragi flour- 1 cup
  2. Oats- 1/2 cup
  3. Milk- 1 cup
  4. Sugar/Jaggery/Honey- as needed
  5. Water- as needed
Method:

Step 1: Take a pan with milk, add ragi flour, mix it well and boil it in low flame.

Step 2: When it boils, add oats and stir it well.

Step 3: After a few minutes, add sugar or powdered jaggery or honey and mix it well.

Step 4: Boil it for a few minutes till it becomes thick consistency. You can add water, if it requires.

Step 5: Finally, switch off the flame and serve it warm.


Now, healthy ragi oats porridge is ready

Mango Pickle


Mango Pickle

Preparation time- 12 hrs
Cooking time-10 mins
Total time- 12 hrs 10 mins

Ingredients (for 4 servings):
  1. Mango (chopped pieces)- 1 kg
  2. Fenugreek seeds-1 tablespoon
  3. Ginger(chopped pieces) - 50 gm
  4. Garlic (chopped pieces)- 50 gm
  5. Dried red chilly- 15 no.
  6. Vinegar (Acetic acid)- 100ml
  7. Salt- as needed
  8. Mustard - 4 tablespoon
  9. Sunflower Oil/ gingelly oil- 250 ml
  10. Chilly Powder- 8 tablespoon
  11. Turmeric powder-3 tablespoon
  12. Curry leaves- 30 no.
Method:

Step 1: Mix chopped pieces of mango with salt and turmeric powder. Keep it for 12 hrs in a glass jar.

Step 2: Take a pan, pour oil and warm it. Add mustard seeds, fenugreek seeds, red dried chilly and curry leaves.

Step 3: After a few minutes, add garlic and ginger, cook it for a minute.

Step 4: Add chilly powder and after a minute, switch off the flame. Then, add vinegar and mix it well.

Step 5: Finally, add mango pieces and mix it well.




Tips and warnings
  • Use glass jar always for storing pickle
  • Keep it in room temperature for 48 hrs and then keep it in fridge for months (I prefer this method).
  • If the pickle is covered with oil, you can keep it in room temperature for months, as the oil acts as a preservative. 
  • When you take the a portion of pickle from bottle, slant the jar and take the mango pieces without oil.
  • Cook it in a medium flame.
  • If it is a maiden attempt, start with a small quantity, because, it needs experience to bring the balance in sour, spicy and salty taste of mango pickle.

Tomato Dosa

Tomato Dosa

Preparation time- 9 hrs

Total time- 9 hrs 10 mins

Ingredients (for 4 servings):
  1. Idli Rice - 1 cup
  2. Urad Dal/ Black Gram Dal -1/2 cup
  3. Cooked Rice- 50 gm
  4. Salt- as needed
  5. Tomato - 1 no.
  6. Onion( Chopped pieces)- 100 gm
  7. Mustard - as needed
  8. Oil- 2 teaspoon
  9. Chilly Powder- 1/2 teaspoon
  10. Turmeric powder-1/4 teaspoon
  11. Curry leaves- 4-5 no.
Method:

Step 1:Soak the dal and rice separately for three hours. Grind (in wet grinder) the dal into smooth paste by adding enough water, then, add soaked rice and cooked rice slowly till it becomes smooth paste. Keep it in room temperature for 6 hrs.

Step 2: Heat a pan, add oil and mustard. After seasoning, add onion and deep fry it till it becomes golden brown color. Add Chilly powder, turmeric powder and curry leaves. Cook it in low flame. Then, add chopped tomatoes. Smash this mixture by using wooden spatula.

Step 3: Allow it to cool. Add this mixture into dosa batter and add salt as needed.

Step 4: Heat a pan and pour batter and spread it.

Appam

Ingredients (for 4 servings):
  1. Rice Flour - 250 gm (Palappam Flour is recommended)
  2. Coconut Milk-1 cup
  3. Cooked Rice - 25 gm
  4. Salt - 1/2 teaspoon
  5. Sugar -1 teaspoon
  6. Yeast- 1 pinch
  7. Rava/Semolina- 50 gm
Method:

Step 1: Take warm milk, add yeast and half teaspoon of sugar, stir it well and keep it for 30 minutes.

Step 2: By the time, cook semolina till it becomes a thick and allow it cool.

Step 3:Mix rice flour, coconut milk, cooked semolina, yeast with warm milk, salt and sugar. Stir it well.

Step 4: Take this mixture in mixer grinder,add cooked rice and grind it by using pulse button.

Step 5: Keep it for 10-12 hrs. 

Step 6: Take "Appachatti", keep it in a low flame and apply oil. Pour the batter in the middle of the appachatti, take it in your hands and rotate the appachatti twice. Then, this batter will spread as a thin sheet into outer portion of the appachatti.

Step 7: Cover it with a lid, heat it in a medium flame for 2-3 mins. Open the lid and using wood spatula take the appams.

Tips and warnings
  • Use casserole for keeping appams
  • Follow the steps carefully
  • Batter should be medium loose
         Now, warm palappam is ready

Ingredients (for 4 servings):
  1. Rice Flour - 250 gm
  2. Grated coconut -100 gm
  3. Grated Jaggary - 50gm
  4. Salt - 1/2 teaspoon
  5. Sugar -1 teaspoon
  6. Cumin seeds- 1 pinch
  7. Banana- 1 no.
Method:

Step 1: Boil a glass of water in a pan, add salt, sugar,rice flour and stir it well. Make a soft dough with your hand after 2 to 3 minutes.

Step 2: By the time, mix grated coconut, grated jaggary, chopped banana and cumin seeds, mix it well.

Step 3:Take lemon sized dough in your hand, make a ball and spread it in round shape in your left hand with right hand.

Step 4: Keep the mixture in center of the flat surface of the dough and make balls.

Step 5: Keep the balls in steamer for 10 minutes. After turning off the flame, open the lid of the steamer and allow it to cool. 

Tips and warnings

  • For easy spreading of dough in your hand, grease the palm with water. 
  • Keep the kozhukattai in steamer after steam produces.

Kerala Paratha

Hi everyone,
Here, I am posting about home made parathas...In fact it is very easy...Definitely you can try it!

Kerala Porotta/ Paratha

Preparation time-10 min
Waiting time- 2 hours
Cooking time-10 min
Total time- 2 hours 10 minutes

Ingredients (for 4 servings):
  1. All purpose flour/ Maida - 1 cup
  2. Warm Milk-1/3 cup
  3. Egg- 1 no.
  4. Salt- 1 teaspoon
  5. Sugar- 1 teaspoon
  6. Oil- As needed
Method:
Step 1: In a bowl, take maida, sugar, salt and egg, mix it well by adding warm milk slowly. Make a soft dough with oil. Keep it for 2 hours.



Step 2:Take small portion of dough and make lemon sized balls. Apply your hand and work surface with oil and spread it as thin layer.



Step 3:Then, fold it side wise as shown in the picture.



Step 4: After that, roll it in a round shape.



Step 5:Carefully flatten the dough with roller.




Step 6:Heat tawa in high flame and place the paratha and cook it in a moderate flame and apply oil as it needed.



Tips and warnings
  • Apply oil liberally
  • Cook it in a moderate flame
  • Make very thin sheet when you spread it with roller

Ingredients (for 4 servings):
  1. Corn Flour - 2 tablespoon
  2. Coconut Milk-5 tablespoon
  3. Chopped Vegetable ( Carrots/Beans/Cabbage) - 100gm
  4. Salt
  5. Butter- 1/2 teaspoon
  6. Pepper
Method:
Step 1: Take a pan, sort chopped vegetables in butter

Step 2:Add 1/2 glass of water and salt, boil it for 10 minutes till vegetables are cooked

Step 3:Meanwhile, mix cornflour and table spoon of water, make a paste form

Step 4: Add corn flour paste and coconut milk to the boiling solution and stir it continuously till it becomes moderate consistency. 

Step 5:Serve it warm with pepper powder

  • Stir it in a same direction
  • Boil it in a moderate flame
  • You can adjust the consistency with coconut milk

Ingredients (for 4 servings):
  1. Custard Powder - 4 tablespoon
  2. Milk-500ml
  3. Sugar-6 tablespoon
  4. Milkmaid- 3 tablespoon (optional)
  5. Chopped Fruits

Method:
Step 1: Take custard powder in a bowl and add milk to form a thick paste and keep it aside.

Step 2:Boil the milk and custard powder paste and stir it well.

Step 3: After 5 minutes, add sugar or along with sugar you can add milk maid also.

Step 4: Stir it continuously till it becomes moderate consistency. 

Step 5:Allow it to cool and refrigerate it. While serving, you can add chopped fruits.

Tips and warnings
  • Stir it in a same direction
  • Boil it in a moderate flame
  • Even if milkmaid is optional here, please add it. It makes custard milk more tasty.

  1. Palada-250 gm
  2. Milk-1 litre
  3. Sugar-250 gm
  4. Ghee- 3 teaspoon
  5. Milkmaid- 3 talespoon (optional)
  6. Raisins-10 no.
  7. Cashewnuts-10 no.
Ada Pradhaman
Method:
Step 1:Cook ada in 3-4 cups of water till it becomes soft, strain the warm water, keep it under running water and again strain it.

Step 2:Heat ghee in a pan, fry raisins and cashew nuts and keep it aside.

Step 3: In the same pan, boil the milk and add sugar and cooked ada.

Step 4: Stir it continuously, after 10 minutes add milk maid and stir till it becomes moderate consistency. 

Step 5: Add fried raisins and cashew nuts, serve it after 45 minutes. 

Tips and warnings
  • Stir it in a same direction
  • Boil it in a moderate flame
  • If you are adding milkmaid, add sugar carefully
  • Please remember to serve after 30-45 minutes.

Drumstick Toor dal Curry
Method:
Step 1: Cook toor dal/parippu and muringakka with salt in pressure cooker till one whistle.

Step 2: Take a frying pan and pour 1 table spoon of oil and heat it in medium flame.

Step 3: Splutter mustard seeds and add chopped pieces of dry red chilly and shallots till it become golden brown color. Add chilly powder and turmeric powder and stir it well.

Step 4:  Add cooked toor dal and muringakka in it and boil it for 5 minutes.

Parippu vada

Parippu vada/ Dal Vada/ Masala Vadai /Lentil Fritters

Preparation time-2 hrs 20 min
Cooking time-10 min
Total time- 2 hrs 30 min

Ingredients (for 2 servings):
  1. Chana Dal/ Kadala Parippu-200 gm
  2. Toor Dal (Tuvara Parippu)-200 gm
  3. Green Chilly-2 no.(finely chopped)
  4. Shallot-6 no.(finely chopped)
  5. Curry Leaves-6no. (finely chopped)
  6. Asafoetida powder(Kayam)-1/2 tsp
  7. Fennel Seeds( Perum jeerakam)-1/2tsp
  8. Ginger-1 inch piece (finely chopped)
  9. Salt - 1 teaspoon (according to your taste)
  10. Oil - 5 tablespoon
Chana and Toor dal

Parippu vada
Method:
Step 1: Soak chana dal and toor dal in water for 2hrs. and drain water for 10 minutes.

Step 2: Crush the soaked dal in mixer grinder with salt and asfoetida powder.

Step 3: Add chopped pieces of green chilly, shallots,curry leaves,fennel seeds and ginger, keep it aside for 10 minutes. Take the mixture and make balls and flatten it with your hand.


Step 4: Pour 5 tablespoon oil in pan and heat it in medium flame.

Step 5:  Fry it deeply until it becomes golden brown color.

Parippu Vada
Now, Crispy Parippu Vada is ready

Drain the water thoroughly. Fry it in moderate flame.
