Preparation time- 10mins

Total time- 20 mins

Ingredients (for 4 servings):
  1. Lololikka- 1 kg
  2. Fenugreek seeds-1 tablespoon
  3. Ginger(chopped pieces) - 50 gm
  4. Garlic (chopped pieces)- 50 gm
  5. Dried red chilly- 15 no.
  6. Vinegar (Acetic acid)- 100ml
  7. Salt- as needed
  8. Mustard - 4 tablespoon
  9. Sunflower Oil/ gingelly oil- 250 ml
  10. Chilly Powder- 8 tablespoon
  11. Turmeric powder-3 tablespoon
  12. Curry leaves- 30 no.
Method:

Step 1: Take a pan, pour oil and warm it. Add mustard seeds, fenugreek seeds, red dried chilly and curry leaves.

Step 2: After a few minutes, add garlic and ginger, cook it for a minute.

Step 3: Add chilly and turmeric powder and after a minute, switch off the flame. Then, add vinegar and mix it well.

Step 4: Finally, add lololikka and salt and mix it well. Allow it to cool. Then, transfer to a clean and dried glass jar and keep it closed for two weeks for soaking of lololikka. In between, shake the jar well but, don't open it.

Tips and warnings
  • Use glass jar always for storing pickle
  • Keep it at room temperature for 48 hrs and then keep it in the fridge for months (I prefer this method).
  • If the pickle is covered with oil, you can keep it at room temperature for months, as the oil acts as a preservative. 
  • When you take the portion of pickle from the bottle, slant the jar and take the lololikka pieces without oil.
  • Cook it in a medium flame.
  • If it is a maiden attempt, start with a small quantity, because, it needs the experience to bring the balance in the sour, spicy and salty taste of lololikka pickle.

Beef chili pickle
Preparation time- 5 mins

Ingredients :
  1. Beef (cube sized) - 500 gm
  2. Gingely Oil- 50ml
  3. Mustard seeds- 1 tsp
  4. Turmeric powder- 3 Tsp
  5. Chili powder- 6 Tsp
  6. Garlic- 20 no.
  7. Ginger- 1 no. (Chopped) 
  8. Salt- as needed
  9. Vinegar- as needed 
  10. Pepper powder- 1tsp 
Method:

Step 1: In a pressure cooker, take washed beef pieces, add salt and keep it on medium flame till you get 4-5 whistles. 

Step 2: Take cooked beef pieces and marinate with chili powder (1 tsp), pepper powder(1/2 tsp),garam masala(1/2 tsp) and turmeric powder(1/2 tsp). 
Pour oil into a pan and warm it on medium flame. Fry marinated beef pieces and keep it aside. Add mustard seeds in the same pan, after a few seconds, add garlic, ginger and curry leaves, and fry it well. Add turmeric powder and chili powder and sort it well for a few seconds. Add fried beef pieces and salt, mix it nicely.

Step 2: Let it cooked for a few minutes, in between stir it well. Do not cover with a lid. Switch off the flame. Finally, add vinegar and mix it well.

Tips and warnings

  • Keep it in an airtight glass jar
  • Use a dry spoon for serving
  • Avoid contact with water

Preparation time- 10 mins

Ingredients for lemon rice:
  1. Cooked white rice-1 cup
  2. Finely chopped onion- 50 gm
  3. Sliced cabbage- 1cup
  4. Oil- 2 tsp
  5. Mustard seeds- 1/2 tsp
  6. Green chili-1 no.
  7. Salt- as needed 
  8. Turmeric powder-1/2 tsp 
  9. Curry leaves-as needed 
Method:

Step 1: Pour oil in a pan and warm it on medium flame. Add mustard seeds and after a few seconds, add chopped onion,  curry leaves, cabbage, chili, turmeric powder and salt, and stir it well.
Add cooked rice and mix it well. Switch off the flame and allow it to cool. 

Ingredients for beans fry:
  1. Sliced beans-1 cup
  2. Finely chopped onion- 50 gm
  3. Oil- 2 tsp
  4. Mustard seeds- 1/2 tsp
  5. Turmeric powder- 1/2 tsp
  6. Green chili-1 no.
  7. Salt- as needed 
  8. Curry leaves-as needed 
Method:

Step 1: Pour oil in a pan and warm it on medium flame. Add mustard seeds, after a few seconds, add chopped onion, chili, beans, curry leaves, turmeric powder and salt, and stir it well. Add 10 tsp of water and cover with a lid, and let it cook for a few minutes. You stir in between well and make sure that it should not get burned.
Switch off the flame and allow it to cool. 

Tips and warnings
  • Do not pack warm foods in lunch box.
  • Put all vegetables including onion and green chili in the water for 1 hour for dilution of pesticides. 
  • For easy peeling of ginger, garlic and onion, soak it water for a few minutes. 
  • You can chop all vegetables and keep it in an air tight container in the fridge in the night for next day lunch. You can peel onion, garlic, ginger and keep it the fridge too. Do not slice it.

Ingredients :
  1. Finely chopped papaya- 100 gm
  2. Oil- 3 tsp
  3. Mustard seeds- 1 tsp
  4. Tumeric powder- 1 tsp
  5. Chili powder- 2 tsp
  6. Salt- as needed
  7. Sugar - 1 pinch   
Method:

Step 1: Pour oil in a pan and warm it on medium flame. Add mustard seeds, after a few seconds, add chopped papaya pieces, turmeric powder, chili powder, salt and sugar, and stir it well. 

Let it cooked for a few minutes, in between stir it well. Do not cover with a lid. When it gets cool, cover with a lid and keep it for overnight in the same vessel. Next day morning, you can transfer it to a glass jar.

Ingredients :
  1. Tuna fish (cube sized) - 100 gm
  2. Gingely Oil- 50ml
  3. Mustard seeds- 1 tsp
  4. Turmeric powder- 3 tsp
  5. Chili powder- 6 tsp
  6. Garlic- 20 no.
  7. Ginger- 1 no. (Chopped) 
  8. Salt- as needed
  9. Vinegar- as needed

Method:

Step 1: Take fish in a vessel, add one teaspoon of turmeric, chili, pepper powder and salt, and marinate it well. Keep it for 20 minutes. Pour oil in a pan and warm it on medium flame. Fry marinated fish pieces and keep it aside. Add mustard seeds in the same pan, after a few seconds, add garlic, ginger and curry leaves, and fry it well. Add turmeric powder and chili powder and sort it well for a few seconds. Add fried fish pieces and salt, mix it nicely.

Step 2: Let it cooked for a few minutes, in between stir it well. Do not cover with a lid. Switch off the flame. Add vinegar and mix it well.

Preparation time- 5 mins

Total time- 10 mins

Please be noted that you have to soak lemon slices for fermentation. Wash lemon very well and keep it for drying. Then, cut into pieces, put it in glass jar with turmeric powder and salt. Mix it with a dry spoon. Avoid contact with water. Keep it closed for one month and in between, you have to shake the jar very well.

Ingredients :
  1. Fermented lemon- 100 gm
  2. Gingely Oil- 50ml
  3. Mustard seeds- 1 tsp
  4. Turmeric powder- 1 tsp
  5. Chili powder- 2 tsp
  6. Garlic- 20 no.
  7. Ginger- 1 no. (Chopped) 
  8. Salt- as needed
  9. Vinegar- as needed 
Method:

Step 1: Pour oil in a pan and warm it on medium flame. Add mustard seeds, after a few seconds, add garlic, ginger and curry leaves, and fry it well. Add turmeric powder and chili powder and sort it well for a few seconds. Add lemon pieces and salt, mix it nicely.

Step 2: Do not cover with a lid. Switch off the flame. Add vinegar and mix it well. You are able to preserve Vitamin C, as you are not cooking the lemon slices.

  4. Turmeric powder- 1 tsp
  5. Chili powder- 2 tsp
  6. Green chili- 2no.
  7. Salt- as needed
  8. Tamarind paste- 2 tsp
  9. Jaggary- 1 tsp
Method:

Step 1: Pour oil in a pan and warm it on medium flame. Add mustard seeds, after a few seconds, add ginger, chopped green chili and curry leaves, and fry it well. Add turmeric powder and chili powder and sort it well for a few seconds. Add salt, tamarind paste and jaggery, mix it nicely.

Step 2: Let it cooked for a few minutes, in between stir it well. Do not cover with a lid. Switch off the flame.
