Apple custard pudding

Apple custard pudding
Preparation time-5 min
Cooking time-10 min
Total time- 15min

Ingredients (for 4 servings):
  1. Custard Powder - 6 teaspoon
  2. Milk-500ml
  3. Sugar-6 tablespoon
  4. Milkmaid- 3 tablespoon (optional)
  5. Chopped apple- 1 no.
  6. Honey- 1 tsp 
Method:
Step 1: Take custard powder in a bowl and add milk to form a thick paste and keep it aside.

Step 2:Boil the milk and custard powder paste and stir it well.

Step 3: After 5 minutes, add sugar or along with sugar you can add milk maid also.

Step 4: Stir it continuously till it becomes moderate consistency. 

Step 5:Allow it to cool and refrigerate it. 

Step 6: Take a pan, boil 100ml of water and add chopped apple pieces. Stir and smash it with a spoon to make thick consistency. Add one tsp of milkmaid and honey. Allow it to cool and refrigerate it. While serving, decorate with cashew nuts and raisins.  
Tips and warnings
  • Stir it in a same direction
  • Boil it in a moderate flame
  • Even if milkmaid is optional here, please add it. It makes custard more tasty.
Now, mouthwatering apple custard pudding is ready

Vegetable Stock with Omelette

                                                     

Preparation time- 5 mins
Cooking time-  10 mins  
Total time- 15 mins
Ingredients :
  • Vegetables sliced - as needed
  • Egg -1 no.
  • Worcestershire Sauce- 3 tsp
  • Fresh cream or mayonnaise- 3 tsp
  • Garlic - 7 no.
  • Ginger (chopped)- 6 no.
  • Pepper powder- as needed  
  • Salt- as needed  
  • Oil- as needed
Method:
Step 1:Take a pan, pour a teaspoon of oil after a few minutes, break the egg on top of it carefully and sprinkle pepper powder and salt. Keep it aside.

Step 2:Boil the vegetables in the water, add worcestershire sauce and fresh cream or mayonnaise, stir it well and salt and pepper as needed. 

Step 3:Serve it in a plate by keeping cheese (optional), fresh cream and omelette on top
         Now, warm vegetable stock with omelette is ready

Vegetable stock with grilled fish and mushrooms

                                                     

Preparation time- 5 mins
Cooking time-  10 mins  
Total time- 15 mins
Ingredients :
  • Vegetables sliced - as needed
  • Grilled Fish -1 no.
  • Mushrooms - as needed 
  • Worcestershire Sauce- 3 tsp
  • Fresh cream or mayonnaise- 3 tsp
  • Garlic - 7 no.
  • Ginger (chopped)- 6 no.
  • Pepper powder- as needed  
  • Salt- as needed 
Method:
Step 1:Take a steak of fish,apply pepper powder, lemon juice and salt and then, grilled it or fry it. 

Step 2:Boil the water in a pan with turmeric powder, add mushrooms in it and keep it for 4 minutes to remove poisonous chemicals. Then, wash the mushrooms under tap water and dry it.  

Step 3:Boil the vegetables in the water, add worcestershire sauce and fresh cream or mayonnaise, stir it well and salt and pepper as needed. 

Step 4:Serve it in a plate by keeping cheese (optional), fresh cream, grilled fish and mushrooms.
         Now, warm vegetable stock with grilled fish and mushrooms is ready

Pineapple Juice

Pineapple Juice
Preparation time- 3 mins
Cooking time-  2 mins  
Total time- 5 mins

Ingredients : 

  1. Pineapple - 200 gm
  2. Sugar - as needed
  3. Ice cubes  - 4 no.
Methods:
Step 1: Cut the pineapple into small pieces and remove inner stem and outer flowers.

Step 2: Take a mixer grinder, put pineapple pieces, ice cubes and sugar. Crush this mixture by using pulse mode (anti clock wise) 2-3 times and then, grind it for 2 minutes using mode no.3.

Step 3: Strain the mixture and pour it in a glass and decorate with a pineapple piece.
             Now, cool pineapple juice is ready

Sambar

Preparation time- 5 mins
Cooking time-  10 mins  
Total time- 15 mins
Ingredients :
  • Vegetables in square pieces - 250 gm ( in total, you can take 2-3 pieces of vegetables from any category).
  • Drumstick - 5-6 pieces
  • Ladies finger - 5-6 pieces
  • Toor dal - 150 gm
  • Salt - as needed
  • Water - 3 glasses
  • Oil - 4 tsp
  • Mustard - 1 tsp
  • Jeera - 1/2 tsp
  • Fenugreek - 1/2 tsp
  • Shallots - 7-8 no.
  • Dried chilly - 4 pieces
  • Turmeric powder - 1/2 tsp
  • Chilly powder - 1/2 tsp
  • Sambar powder - 4 tsp
  • Tomatoes - 3 no./ mango pieces - 6-7 no. or you can use tamarind pulp as needed.
  • Garlic - 3 no. (helps to prevent gaseous problems in the stomach)
  • Asafoetida - 1/2 tsp (helps to get  taste and prevents gaseous problems in the stomach).
  • Curry leaves -10 no.
  • Coriander leaves - as needed 
Method:
Step 1: Take pressure cooker, put all vegetables, dal, water and salt and cook it till one whistle blows.
Step 2: Take a pan, add oil, mustard, jeera, fenugreek, curry leaves and dried chilly.
Step 3: Add onion, saute it well till it becomes golden brown color.
Step 4: Add turmeric, chilly and sambar powder, saute it for 30 seconds on low flame.
Step 5: Add tomato pieces or mango pieces and allow it to get cooked. If you are using tamarind pulp, add it last.
Step 6: Add ladies finger, drumsticks with 1/2 glass of water and allow it to boil. Cook it for 5 minutes by covering with a lid.
Step 7: Add the mixture to pressure cooker, add asafoetida and stir it well. Allow it to boil for 3 minutes and regulate the salt as required.
Step 8:Finally, you might use coriander leaves if needed.                         

Now, warm sambar is ready

Ingredients :

Method:
Step 1: Keep Sponge cake piece on a bowl.
Step 2: Pour custard milk.
Step 3: Then, keep sliced fruits.
Step 4: Beat whipped cream in cooled water and keep it fridge for 10 minutes. After repeating four times in the same method, you will get a creamy texture like an ice cream and keep on top of it.
                                                                     
Now, tasty fruit cake salad is ready

Dal Curry

Preparation time- 5 mins
Cooking time-  10 mins  
Total time- 15 mins

Ingredients : 
  1. Toor dal - 200 gm
  2. Salt - as needed
  3. Oil -3 tsp
  4. Mustard - 1 tsp
  5. Jeera -1/2 tsp
  6. Dried chilly - 3 no.
  7. Curry leaves -10 no.
  8. Sliced shallots - 5 no.
  9. Green chilly - 2 no.
  10. Garlic - 3 no.
  11. Asafoetida - 1/2 tsp
  12. Turmeric powder - 1/2 tsp
Methods:
Step 1: Soak the dal in the water for 1 hour. Boil it in one glass of water with salt in pressure cooker for two whistles. Smash the toor dhal well and keep it aside.
Step 2: Take a pan, add oil, mustard, jeera, dried chilly and curry leaves.

Step 3: Then, add shallots and green chilly and saute it well till it becomes golden brown color.

Step 4: Add asafoetida and turmeric powder, saute it for 30 seconds on low flame.

Step 5: Add cooked toor dal and boil it for three minutes.
                                                                                                    
Now, warm dal curry is ready

Jackfruit cooked / Chakka vevichathu / Chakka puzhukku

Jack fruit cooked

Preparation time- 5 mins
Cooking time-  7 mins  
Total time- 12 mins

Ingredients : 

  1. Jack fruit -1/2 kg
  2. Curry leaves -20 no.
  3. Coconut-1/2 cup
  4. Onion -5no.
  5. Green chilly - 3 no.
  6. Garlic - 3 no.
  7. Turmeric powder -1/2 tsp
  8. Salt - as needed
Methods:
Step 1: Crush the coconut, onion, green chilly, garlic and turmeric powder into a moderate paste. If you are using mixer grinder, crush it in pulse mode 2-3 times.                     
Step 2: Take a pan with jackfruit, curry leaves. Add crushed mixture and one glass of water. Add salt as needed.                         
Step 3: Cook it on moderate flame for 5-7 minutes.                            
Step 4: With the wooden stick or spoon, mix the cooked jack fruit well.                                   
Step 5: Serve it with fish, mutton, chicken, beef or egg curry.                                                  
Tips: Cover the pan with lid, only after the water gets boiled.
          Adding garlic helps to prevent gaseous problems in the stomach.

Ada Pradhaman

Preparation time- 5 mins
Cooking time-  20 mins  
Total time- 25 mins

Ingredients : 

  1. Palada - 250 gm  
  2. Jaggary -200gm
  3. Water- 1 glass
  4. Ghee -100 gm
  5. Raisins -25 gm
  6. Cashew nuts -25gm
  7. Thick coconut milk -1 glass
  8. Moderate coconut milk- 1 glass
  9. Dried ginger (chukku) -1 piece 
Methods:
Step 1: Wash ada and keep it dry.

Step 2: Add powdered jaggary in one glass of boiling water, stir it well for five minutes, strain it and keep it aside.

Step 3: Take a pan, add ghee on a moderate flame. Roast the ada till it becomes brown color.

Step 4: Add moderate thick coconut milk on a moderate flame, stir it well in a same direction continuously.

Step 5: After seven minutes, add jaggary solution and crushed chukku (dried ginger) and stir it well in a same direction continuously.

Step 6: After seven minutes, add thick coconut milk, stir it continuously in a same direction.

Step 7: When the payasam becomes thick, you can stop the flame.

Step 8: Take another pan, roast the raisins and cashew nuts in ghee separately, then add to the payasam.

Step 9: You can serve it with pappad and banana.


         Now, tasty ada pradhaman is ready

Prawn Mango Curry

Prawn Mango Curry

Preparation time- 10 mins
Cooking time-  10 mins 
Total time- 20 mins

Ingredients :
  1. Prawns -200 gm
  2. Mango pieces- 200 gm
  3. Coconut oil- 6 tsp
  4. Mustard - 1 tsp
  5. Cumin Seeds- 1/2 tsp
  6. Asafoetida- 1/2 tsp
  7. Onion sliced- i no.
  8. Green chilly-3 no.
  9. Red chilly powder- 1 tsp
  10. Turmeric powder- 1/2 tsp
  11. Coriander powder-1/2 tsp
  12. Thick coconut milk- 200 ml
  13. Medium thick coconut milk- 200 ml
  14. Curry leaves- 15 no.
  15. Red chilies- 3 no.
  16. Coriander leaves- if needed
  17. Salt -as needed
Method:
Step 1: Take a pan, heat it on medium flame. Pour 3 tsp oil. Add cumin seeds, green chilies and onion and saute it well.

Step 2: Add red chilly powder, turmeric powder and coriander powder and saute it for 30 seconds. Add mango pieces and again saute it for 1 minute. 

Step 3: Add medium thick coconut milk and allow it cook for five minutes. Then add prawns, salt and asafoetida and cover it with a lid for five minutes.

Step 4: Add thick coconut milk and warm it for 30 seconds. Switch of the flame.

Step 5: Take another pan, add coconut oil, mustard seeds, curry leaves,shallots and red chilies, saute well till it becomes golden brown color. Add this mixture to mango prawn curry.
     Now, tasty prawn mango curry is ready

Ingredients
  1. Beef- 1 steak
  2. Turmeric powder- ½ tsp
  3. Chilly powder-1 tsp
  4. Pepper powder-1/2 tsp
  5. Salt
  6. Lemon juice-1 tsp
  7. Vegetables- as needed
  8. Corn- as needed
  9. Butter-2 tsp
  10. Cheese- 1 slice
  11. Fresh cream- as needed
  12. Egg-1
For Sauce
  1. Wickenburg sauce- 3 tsp
  2. Red wine- 1 tsp
  3. Oil -2 tsp
  4. Chopped Onion – 1
  5. Pepper- 1 tsp
Method:
Step 1: Prepare the grilled beef.( Visit Grilled Chili Beef Steak ).
Step 2: Heat the pan in one stove. Take another pan, sauté the vegetables in butter. Keep it on nearby pan which is on the low flame. 
Step 3: For sauce, pour oil, sauté onions, add pepper and salt, add Wickenburg sauce, red wine and fresh cream. Regulate the taste by adding salt (if needed) or adding a pinch of sugar.
Step 4:Place grilled beef on top of vegetables, pour warm sauce.
Step 5: Break the egg on the top of it. Sprinkle cheese and then, fresh cream.Take the pan from the stove. Serve it on the same pan as warm.
 Now, warm beef  steak sizzler is ready

Butter Cookies

Preparation time- 10 mins
Cooking time-  10 mins 
Total time- 20 mins

Ingredients :
  1. All purpose flour/Maida- 1 cup
  2. Baking powder-1 tsp
  3. Salt-1/2 tsp
  4. Powdered sugar- 1/2 cup
  5. Butter- 20 gm
Method:

Step 1: Take maida and salt in a strainer,sift it two times and keep it aside.

Step 2: Take powdered sugar and butter in a bowl, stir it well and double boil it until the sugar dissolves.

 Step 3: Add sifted flour into above mentioned mixture and mix it well.
Maida Dough

Step 4: Take a pan, apply butter liberally and dust it with maida and spread butter paper (optional). Take a portion of dough in the hand (lemon size) and press with your hand to get it shaped.

Step 5: Pre heat the oven at 180 Degree Celsius and bake the cookies in conventional mode at 180 Degree Celsius for 10 minutes.After 10 minutes, if it does not have golden brown color, go for another 5-10 minutes.

Step 6: Take the pan from oven and allow it to cool.
Now, crispy butter cookies are ready

Ingredients :
  1. Dragon Fruit Pulp-100 gm
  2. Milk- 100 ml
  3. Sugar- 5 Tablespoon
  4. Milkmaid- 2 Tablespoon
  5. Ice cubes- 3 no.
Method:

Step 1: Take dragon fruit pulp, milk, sugar and milkmaid in a mixer grinder and blend it for couple of seconds.

Step 2: Pour it in serving glass and add ice cubes.

Step 3: Serve chilled dragon fruit milk shake.


Now, chilled dragon fruit milkshake is ready.

Vanilla Sponge Cake
Preparation time- 10 mins
Cooking time-  20 mins 
Total time- 30 mins

Ingredients :
  1. Corn flour-2 tsp
  2. All purpose flour/Maida- 1 cup
  3. Baking powder-1 tsp
  4. Salt-1/2 tsp
  5. Egg-3 no.
  6. Powdered sugar- 1 cup
  7. Vanilla essence-1 tsp
  8. Butter- 20 gm
  9. Milk- 2 tsp
Method:
Steps to prepare sponge cake
Step 1: Take maida, corn flour, baking powder and salt in a strainer, sift it two times and keep it aside.

Step 2: Take three eggs and powdered sugar in a bowl, stir it well and double boil it until the sugar dissolves. Using handheld electric beater, beat it continuously till the mixture turns into thick paste. Then, add vanilla essence and mix it well with the beater (as shown in picture 1).

Step 3: Take butter and milk in a bowl and heat it in microwave mode at 540 F for 2 minutes and allow it to cool.

Step 4: Add sifted flour and melted butter into beaten mixture. Fold it gently with wooden spatula. Take cake pan, apply butter liberally and dust it with maida and spread butter paper (as shown in picture 2). Pour the prepared mixture into the cake pan and tap it on both sides to expel the air bubbles (as shown in picture 3).

Step 5: Pre heat the oven at 180 Degree Celsius and bake the cake in conventional mode at 180 Degree Celsius for 20 minutes. After 20 minutes, insert a long stick into the baked cake and withdraw it. If the stick is sticky, you have to bake it for another 5-10 minutes  (as shown in picture 4).

Step 6: Take the pan from oven and allow it to cool.
Vanilla Sponge Cake
This cake is very soft and even if you keep it in refrigerator for 2-3 days, still it will be very soft....really!!

               Now, spongy vanilla cake is ready

Grilled Chili Beef Steak

Grilled Chili Beef Steak

Preparation time- 5 mins
Cooking time-  30 mins 
Total time- 35 mins

Ingredients :
  1. Beef Steak- 1
  2. Lemon Juice- 1 tablespoon
  3. Chili Powder- 1/2 teaspoon
  4. Turmeric Powder- 1/2 teaspoon
  5. Pepper Powder- 1 tsp
  6. Salt - as needed
Method:

Step 1: Mix chili powder, turmeric powder, pepper powder and lemon juice with salt, apply it on beef steak. Cook it in microwave oven for 10 mins in 900W.
Chili Beef Steak for grilling
Step 2: Take high rack for grilling, spread aluminium foil paper and keep the cooked beef steak as shown in the picture. Apply oil on one side with oil brush.

Step 3: Keep it in oven and switch on 'Grill' mode for 10 mins.

Step 4: Take the beef out, turn it upside down, apply oil and grill it for 10 mins.
Try it.....really very tasty...like crispy spicy beef!!
