Mushroom cheesy pizza with home made base

Mushroom cheesy pizza with home made base
Preparation time- 2 hour

Ingredients (for 4 servings):
  1. Whole purpose flour- 1cup
  2. Butter- 50 gm
  3. Salt- as needed
  4. Egg- 1
  5. Yeast- 7 gm
  6. Sugar- 1 tsp
  7. Milk-5 tsp  
  8. Mayonnaise-3 tsp
  9. Tomato ketchup- 3 tsp
  10. Cheese grated as needed
  11. Mushroom- 100 gm
  12. Tomato chopped- 1 no.  
  13. Capsicum chopped-1 no.
  14. Onion chopped- 1 no.  
Method:

Step 1: Add yeast and sugar in lukewarm milk and keep it aside for 5 minutes.

Step 2: In a bowl, mix flour, butter, salt, egg and yeast solution and knead it well for 5-7 minutes.

Step 3:Cover with a wet cloth and keep it for 2 hours for fermentation. After 2 hours, take pizza tray, dust with butter and  flour and spread the dough as shown in the picture.

Step 4: Spread mayonnaise and tomato ketchup uniformly and keep all chopped vegetables and grated cheese on top of it. Keep it in a pre heated oven in 220 degree celsius for 20-25 minutes in a medium height metal rack.

Ingredients (for 4 servings):
  1. Tomato- 2 no.
  2. Onion-1 no.
  3. Turmeric powder-1/2 teaspoon
  4. Shallots-6 no.(finely chopped)
  5. Curry Leaves-6 no. (finely chopped)
  6. Grated coconut- 1 cup
  7. Green chilli-1 no.
  8. Cumin seeds-1 tsp 
  9. Mustard Seeds-1/2 teaspoon
  10. Oil - 1 table spoon
  11. Salt-2 teaspoon
Method:
Step 1: Cook sliced tomato and onion with salt in boiling water.

Step 2: Take coconut, turmeric powder, green chilli, cumin seeds and onion and grind it as paste. Add this to boiling tomato on the medium flame and stir it well. 

Step 3: Take another frying pan and pour 1 table spoon of oil and heat it in medium flame. Splutter mustard seeds, curry leaves and add chopped pieces of dried red chilly and shallots till it become golden brown color. Add this to curry and stir it well.

Ingredients :
  1. Chopped tapioca- 500gm
  2. Garlic chopped-2 tsp
  3. Green Chilli- 1 no.
  4. Turmeric Powder- 1/2 teaspoon
  5. Sambar Onion- 5 no. (Medium size, sliced)
  6. Cumin seeds-1 tsp
  7. Curry leaves- as needed
  8. Grated coconut- 1 cup
  9. Coconut oil- 2 tsp 
  10. Salt - as needed
Method:

Step 1: Cook tapioca in boiled water with salt. When its get cooked, strain water and again, keep it on the stove with low flame.

Step 2: Take coconut, garlic, green chilli, turmeric powder, sambar onion and cumin seeds and grind it as a paste.
  Step 3: Add this mixture to cooked tapioca, stir it well and keep it closed with a lid for five minutes

Step 4: Then, add coconut oil. Finally, you can garnish with curry leaves too.

  1. Tuna/King fish pieces- 500 gm
  2. Kodampuli/ Malabar tamarind- 2 pieces
  3. Gingelly/any vegetable oil -4tsp
  4. Mustard -1 tsp
  5. Cumin seeds -1/2 tsp
  6. Fenugreek-1/2 tsp
  7. Shallots/ small onion-20 no. (sliced)
  8. Onion sliced-1 no.
  9. Ginger chopped- 2 tsp
  10. Garlic chopped-3 tsp
  11. Salt- as needed
  12. Chilly powder-3 tsp
  13. Turmeric powder-1 tsp
  14. Coriander powder-2tsp 
  15. Curry leaves - as needed
  16. Coriander leaves- as needed
Methods
1.Soak tamarind in one glass of lukewarm water and keep it aside.

2.Pour oil in a pan, add mustard, cumin and fenugreek seeds. After a few minutes, add shallots/small onion,onion, ginger, garlic and curry leaves and sort it well till it becomes golden brown color.

3.Then, add turmeric powder, chilly powder and coriander powder and sort it well.

4.After a  minute, add tamarind water along with two glasses of water and allow it to boil for 5 minutes.

5.After that, add fish pieces and allow it to boil till it becomes a thick gravy.

6.You can serve it after garnishing with curry and coriander leaves.

  • Do not compromise on adding garlic, as it prevents abdominal distension.
  • Cook the fish curry in medium flame.
  • You can store it under refrigeration for 2-3 days, as tamarind acts as preservative.    
  • You can add coconut milk also, it gives attractive color and taste to the fish curry.
