Ada Pradhaman/ Palada Pradhaman

Ingredients (for 4 servings):
  1. Palada-250 gm
  2. Coconut Milk- from one coconut
  3. Jaggary-250 gm
  4. Ghee- 3 teaspoon
  5. Sugar- 5 tsp
  6. Raisins-10 no.
  7. Cashewnuts-10 no.
  8. Dried ginger- 1 small piece
  9. Elachi/ cardamom- 3 no.
Method:
Step 1:Cook ada in 3-4 cups of water till it becomes soft, strain the warm water, keep it under running water and again strain it. Grind grated coconut and mix it with water and strain it three times, and keep it in three vessels. Boil a glass of water in a bowl and add powdered jaggary. When jaggary dissolves, strain it (this is for removing debris)

Step 2:Heat ghee in a pan, fry raisins and cashew nuts and keep it aside.

Step 3: In the same pan, add ghee and cooked palada and stir it well. Add jaggary solution and cook it for five minutes. After this, add coconut milk,  which is strained last and stir it for five minutes. Then, add coconut milk,  which is strained second and stir it till it becomes thick. At this stage, you can add crushed dried ginger and elachi and sugar too.

Step 4: Stir it continuously, after 10 minutes add coconut milk, which is strained first and stir till it becomes moderate consistency. 

Step 5: Add fried raisins and cashew nuts, serve it after 45 minutes. 

Tips and warnings
  • Stir it in a same direction
  • Boil it in a moderate flame
  • Please remember to serve after 30-45 minutes.
