Parippu vada

Parippu vada/ Dal Vada/ Masala Vadai /Lentil Fritters

Preparation time-2 hrs 20 min
Cooking time-10 min
Total time- 2 hrs 30 min

Ingredients (for 2 servings):
  1. Chana Dal/ Kadala Parippu-200 gm
  2. Toor Dal (Tuvara Parippu)-200 gm
  3. Green Chilly-2 no.(finely chopped)
  4. Shallot-6 no.(finely chopped)
  5. Curry Leaves-6no. (finely chopped)
  6. Asafoetida powder(Kayam)-1/2 tsp
  7. Fennel Seeds( Perum jeerakam)-1/2tsp
  8. Ginger-1 inch piece (finely chopped)
  9. Salt - 1 teaspoon (according to your taste)
  10. Oil - 5 tablespoon
Chana and Toor dal

Parippu vada
Method:
Step 1: Soak chana dal and toor dal in water for 2hrs. and drain water for 10 minutes.

Step 2: Crush the soaked dal in mixer grinder with salt and asfoetida powder.

Step 3: Add chopped pieces of green chilly, shallots,curry leaves,fennel seeds and ginger, keep it aside for 10 minutes. Take the mixture and make balls and flatten it with your hand.


Step 4: Pour 5 tablespoon oil in pan and heat it in medium flame.

Step 5:  Fry it deeply until it becomes golden brown color.

Now, Crispy Parippu Vada is ready

Tips and warnings
Drain the water thoroughly. Fry it in moderate flame.

Sardine Pepper Fry

Sardine Pepper Fry (Mathi Fry/ Varuthathu)

Preparation time-15min
Cooking time-5min
Total time- 20 min

Ingredients (for 2 servings):
  1.  Sardine /Mathi- 4 pieces
  2. Chilly powder - 1 teaspoon
  3. Turmeric powder - 1/2 teaspoon
  4. Pepper powder - 1 teaspoon
  5. Salt - 1 teaspoon
  6. Oil - 1 tablespoon
Sardine marinated
Method:
Step 1: Wash Sardine /Mathi very well and make oblique gashes on both sides( as shown in the picture).

Step 2: Add Chilly,turmeric powder, pepper powder and salt in the bowl, mix it well and make a thick paste. 

Step 3: Marinate 
both sides of sardines with your hands very well and keep it for 10 min.

Step 4: Pour 1 tablespoon oil in pan and heat it in medium flame.


Step 5: Put the marinated sardines in it and
 fry it deeply.

Babycorn Bajji

Babycorn Bajji / Babycorn  Packoda

Ingredients (for 2 servings):

1. Baby Corn-4 pieces
2. Gram flour (Kadala Mavu)- 4 tablespoons
3. Refined wheat flour (Maida)-4 tablespoons
4. Chilly powder - 1 teaspoon
5. Turmeric powder - 1/2 teaspoon
6. Garam masala - 1 pinch
7. Milk- 4 teasppon
8. Salt - 1 teaspoon
9. Oil - 1 Tablespoon
Babycorn
Method:
Step 1: Take gram flour and refined wheat flour in a bowl, mix it well.

Step 2: Add Chilly,turmeric powder and garam masala in the bowl,mix it well. Then, add milk and salt, make a paste form. If you need, add water.


Step 3: Dip baby corns in the paste. 


Step 4: Pour 1 tablespoon oil in pan and heat it in medium flame.


Step 5: Put the dipped baby corns in it and fry it deeply.
