Ingredients for Soft and crispy uzhunnu vada :
  1. Urad dal- 200 gm
  2. Fenugreek seeds- 4 no. ((Secret ingredient and makes a lot of difference to the dish)
  3. Sambar onion- 5 no. (sliced finely)
  4. Green chili- 1 no.  (sliced finely)
  5. Curry leaves- as needed (sliced finely)
  6. Ginger- 1 tsp (finely chopped)
  7. Asafoetida- 1/2 tsp (optional)
  8. Salt- as needed  
Method:

Step 1: Soak the urad dal and fenugreek seeds in water 4-6 hours and keep it in a strainer to drain water for 10 minutes. In a mixer jar, take soaked items and grind it as paste without adding water. You can keep this mixture in an airtight container in the fridge for two days.

Step 2: Add sliced onion, chili, curry leaves, ginger and salt to mixture and mix it well. Take a pan, pour oil when it gets warm on medium flame.

Step 3:Take a portion in your wet hand and press it gently in the middle to get a hole to get the desired shape. Then, put it the oil. After 3-4minutes, turn it to another side. Serve as warm.
