Spicy kadala curry/ chana/chickpeas masala
Preparation time- 10 mins
Cooking time-20 mins
Total time- 30 mins

Ingredients (for 4 servings):
  1. Soaked channa/ Black Bengal gram (for 6-7 hrs)- 100 gm
  2. Oil-2 Tablespoon
  3. Mustard- 1 Teaspoon
  4. Dried Red chilies- 3 pieces
  5. Onion chopped- 1 no.
  6. Curry leaves- 10 no.
  7. Chilly powder- 2 Teaspoon
  8. Turmeric powder- 1 Teaspoon
  9. Coriander powder- 3 Teaspoon
  10. Garam masala- 1/2 Teaspoon
  11. Tomato- 1 no.
  12. Coriander leaves-3 no.
  13. Curry leaves- as needed
  14. Corn flour- 2 tsp (Secret ingredient and makes a lot of difference to the dish)
  15. Salt- as needed
Method:

Step 1: Cook soaked channa with salt in a pressure cooker till 3 whistles and keep it aside.

Step 2: Take a pan, warm oil over a low flame, add mustard, dried red chilies, curry leaves and onion and fry it deeply until it becomes golden brown color.

Step 3: Then, add chilly powder, turmeric powder, coriander powder and garam masala and mix it well. After a few minutes, add chopped tomato. Stir it well and cook for a few minutes.

Step 4: Then, add cooked channa, mix it well and allow it to boil for a minute. Mix cornflour with two tablespoons of water and add to the mixture and boil it for a few minutes and sprinkle chopped coriander and curry leaves. Switch off the flame. Let it cool. Then, check the salt level and add it accordingly.

  1. Finely sliced onion- 1 cup
  2. Turmeric powder- 1 tsp
  3. Kashmiri chili powder- 2 tsp
  4. Garam masala- 1/2 tsp
  5. Salt- as needed
  6. Whole purpose flour- 2 tsp 
  7. Corn flour- 4 tsp ((Secret ingredient and makes a lot of difference to the dish)
  8. Egg-1 ((Secret ingredient and makes a lot of difference to the dish)
Method:

Step 1: In a bowl, take the onion, turmeric powder, chili powder, garam masala, and salt, and mix it well. Add maida and corn flour, and mix it well. Then, add an egg instead of water and mix it well. Keep it aside.

Step 2: After 30 minutes, take a pan, pour oil and warm it on medium flame. After a few minutes, take the portions of the mixture and fry it deeply till it becomes crispy. 

Step 3: Take a plate, spread a towel or tissue paper and keep the fried onion balls to absorb excess oil.

Ingredients (for 4 servings):
  1. Custard Powder - 4 tablespoon
  2. Milk-500ml
  3. Sugar-6 tablespoon
  4. Crushed dry fruits (Almonds, walnuts, pista and cashew nuts)- 1/2 cup
  5. Soaked dry fruits (including raisins)- as needed
Method:
Step 1: Take custard powder in a bowl and add milk to form a thick paste and keep it aside.

Step 2:Boil the milk and custard powder paste and stir it well.

Step 3: After 5 minutes, add sugar or along with sugar you can add milk maid also.

Step 4: Stir it continuously till it becomes moderate consistency. Add crushed dry fruits now.

Step 5:Allow it to cool and refrigerate it. While serving, you can add soaked dry fruits.

Tips and warnings
  • Stir it in a same direction
  • Boil it in a moderate flame
  • Even if milkmaid is optional here, please add it. It makes custard milk more tasty.

Method:

Step 1: Take a bowl, put sliced onion, chili, cabbage, curry leaves, turmeric powder, pepper powder and salt, and mix it well. Add egg and mix it very well.

Step 2: Take a frying pan, warm it on medium flame and spread the oil. After a few minutes, pour egg mixture and rotate the pan to spread egg evenly. Then, flip the omelette and take out from the pan after a few minutes.

Ingredients for veg masala momos:
For dough
  1. Rice flour- 1 cup
  2. Boiling water- as needed
  3. Salt- 1 tsp
For filling

  1. Oil- 1 tsp (Prefer Rice bran oil)
  2. Cumin seeds- 1/2 tsp
  3. Chopped onion- 1 no.
  4. Garlic and ginger- 1 tsp
  5. Turmeric powder- 1/2 tsp
  6. Chili powder-1 tsp (prefer Kashmiri chili powder)
  7. Garam masala- 1/2 tsp
  8. Beans chopped- 1/2 cup
  9. Carrot chopped- 1/2 cup
  10. Boiled potato chopped- 1/2 cup
  11. Green peas- 15 no.
  12. Chopped cabbage and capsicum- 1/2 cup (optional)
  13. Grated cheese- 1/2 cup (this is the secret ingredient to make momos very soft and pulpy). 

Method:

Step 1: Pour oil into a pan and warm it on medium flame. Add cumin seeds, ginger, garlic, and onion. Stir it well. After a few minutes, add all powders, mix it well and then add all vegetables. Cook it for a few minutes with and without covering a lid. Let it cool and keep it aside.

Step 2: Take rice flour and salt, pour boiling water, mix it well with a spoon. You try to knead the dough with hand for three minutes. Take a portion of dough, spread it on your hand and fill with the mixture and grated cheese (this is the secret ingredient to make momos very soft and pulpy).

Step 3: Take steamer, pour water and boil it on high flame. When steam comes, keep all momos in the steamer and cook it for 10 minutes. After that take the momos outside and allow it to cool.

Ingredients :

  1. Puttu powder- 1 cup
  2. Sugar- 1 Tsp
  3. Salt-1/2 Tsp
  4. Grated coconut- 10 Tsp
  5. Water at room temperature- as needed
Method:

Step 1: Take a bowl, mix all dry ingredients well, sprinkle water frequently and mix it well. The aim is to get wet flour without any lumps. Keep it for 15 minutes.

Step 2: Take a pressure cooker without pressure regulator, pour a cup of water and keep it on high flame.

Step 3: Take puttu mold, spread a layer of coconut and put wet flour. If the flour is not moist enough, you can sprinkle water and mix it well. 

Step 4: When water gets boiling, you can keep puttu mold on the vent tube and wait till steam comes and then, you allow it to cook in steam for six minutes. Serve immediately as warm. (This is secret of keeping puttu as soft and moist)

Ingredients :
  1. Toor dal-100 gm
  2. Chopped banana stem- 1 cup 
  3. Garlic chopped-1/2 tsp
  4. Green Chili- 1 no.
  5. Turmeric Powder- 1/2 teaspoon
  6. Sambar Onion- 5 no. (Medium size, sliced)
  7. Cumin seeds-1 tsp
  8. Curry leaves- as needed
  9. Grated coconut- 1 cup
  10. Coconut oil- 2 tsp 
  11. Dried chili- 2 no.
  12. Mustard seeds-1 tsp 
  13. Salt - as needed
Method:

Step 1: Take a pressure cooker, add dal, banana stem, salt and pour a glass of water, and cook it on medium flame. After 3 whistles, open the cooker and mash dal very well.

Step 2: Take coconut, garlic, green chili, turmeric powder, sambar onion and cumin seeds and grind it as a paste.

Step 3: Add this mixture and to cooked mixture, stir it well and keep it closed with a lid for five minutes on medium flame.

Step 4: Take a pan, pour oil. Put mustard seeds, dried chilly, pieces of shallots and curry leaves into the oil. Add this to cooked mixture.
