Total time- 10 mins

Ingredients :
  1. Finely chopped carrot and beans- 50 gm
  2. Finely chopped onion- 1 no.
  3. Roasted vermicelli- 100 gm 
  4. Oil- 3 tsp
  5. Mustard seeds- 1 tsp
  6. Green chili- 1 no.
  7. Curry leaves- as needed
  8. Salt- as needed 
Method:

Step 1: Pour oil in a pan and warm it on medium flame. Add mustard seeds, after a few seconds, add chopped onion, carrot, beans, curry leaves, green chili and salt, and stir it well. After a few minutes, pour one glass of water and let it boil. Add roasted vermicelli and let it cooked for a few minutes by covering with a lid, in between stir it well.

  5. Tumeric powder- 1 tsp
  6. Chili powder- 2 tsp
  7. Salt- as needed 
Method:

Step 1: Pour oil in a pan and warm it on medium flame. Add mustard seeds, after a few seconds, add chopped onion, bitter gourd, curry leaves, turmeric powder, chili powder and salt, and stir it well. 

Let it cooked till it gets dry, in between stir it well and don't cover it.

Ingredients :
  1. Tuna fish (cube sized) - 100 gm
  2. Gingely Oil- 50ml
  3. Mustard seeds- 1 tsp
  4. Turmeric powder- 3 tsp
  5. Chili powder- 6 tsp
  6. Garlic- 20 no.
  7. Ginger- 1 no. (Chopped) 
  8. Salt- as needed
  9. Vinegar- as needed 
  10. Pepper powder- 1tsp 
Method:

Step 1: Take fish in a vessel, add one teaspoon of turmeric, chili, pepper powder and salt, and marinate it well. Keep it for 20 minutes. Pour oil in a pan and warm it on medium flame. Fry marinated fish pieces and keep it aside. Add mustard seeds in the same pan, after a few seconds, add garlic, ginger and curry leaves, and fry it well. Add turmeric powder and chili powder and sort it well for a few seconds. Add fried fish pieces and salt, mix it nicely.

Step 2: Let it cooked for a few minutes, in between stir it well. Do not cover with a lid. Switch off the flame. Add vinegar and mix it well.

  • Keep it in an airtight glass jar
  • Use dry spoon for serving
  • Avoid contact with water

Preparation time- 10 mins

Ingredients :
  1. Corn flour-3 tsp
  2. All purpose flour/Maida- 1 cup
  3. Baking powder-1 tsp
  4. Salt-1/2 tsp
  5. Egg-3 no.
  6. Powdered sugar- 1 cup
  7. Vanilla essence-1 tsp
  8. Butter- 20 gm
  9. Milk- 2 tsp
  10. Cloves-2
  11. Nutmeg-1
  12. Raisins- 50 gm
  13. Cashew nuts- 50gm
  14. Coconut water- 100 ml
  15. Yeast- 1/2 tsp
  16. Instant coffee powder- 1 tsp  
Method:
Pre-preparation
  1. Add yeast and one teaspoon of sugar in coconut water
  2. Soak raisins and cashew nuts in coconut water in a glass bottle for 24 hours.
  3. For caramel solution, take a pan, put sugar and butter, stir it in low flame. When it melts, add warm water
  4. Add coffee powder in 2 tsp of warm water and keep it aside. 
Step 1: Take maida, corn flour, baking powder, powdered nutmeg and cloves and salt in a strainer, sift it two times and keep it aside.

Step 2: Take three eggs and powdered sugar in a bowl, stir it well and double boil it until the sugar dissolves. Using handheld electric beater, beat it continuously till the mixture turns into thick paste. Then, add vanilla essence, coffee and caramel solution and mix it well with beater.

Step 3: Take butter and milk in a bowl and heat it in microwave mode at 540 F for 2 minutes and allow it to cool.

Step 4: Add sifted flour, soaked raisins, cashew nuts and melted butter into beaten mixture. Fold it gently with wooden spatula. Take cake pan, apply butter liberally and dust it with maida and spread butter paper. Pour the prepared mixture in the cake pan and tap it on both sides to expel the air bubbles.

Step 5: Pre heat the oven at 180 Degree Celsius and bake the cake in conventional mode at 180 Degree Celsius for 35 minutes. After 35 minutes, insert a long stick into the baked cake and withdraw it. If the stick is sticky, you have to bake it for another 5-10 minutes.

Step 6: Take the pan from oven and allow it to cool.

This cake is very soft and even if you keep it in a refrigerator for 2-3 days, still it will be very soft....really!!

Sadhya includes a variety of dishes traditionally served on banana leaves especially occasions like onam, festivals, and marriage. It is served with around 25 dishes includes a wide variety of vegetables, fruits, cereals, and millets, which gives balanced nutrition for all age groups. It includes rice, curry, pickles, porridges, and fruits. If you are able to plan properly, you can alone prepare a sadhya at home. 
  • Decide how many people to be served
  • Prepare pickles in advance
  • Prepare curry dishes in minimum quantity to avoid wastage of foods.
  • Cut vegetables based on the dishes at first
  • Grate coconut for pachadi and payasam
  • Cook rice based on the number of people
  • You can grind coconut paste for all pachadi, erissery, kalan, kitchadi and avial too
  • Cook dal for rasam, sambar and dal curry
  • Extract coconut milk for payasam and olan

Please be noted that you have to soak lemon slices for fermentation. Wash lemon very well and keep it for drying. Then, cut into pieces, put it in glass jar with turmeric powder and salt. Mix it with a dry spoon. Avoid contact with water. Keep it closed for one month and in between, you have to shake the jar very well.

  3. Mustard seeds- 1 tsp
  4. Turmeric powder- 1 tsp
  5. Chili powder- 2 tsp
  6. Garlic- 20 no.
  7. Ginger- 1 no. (Chopped) 
  8. Salt- as needed
  9. Vinegar- as needed 
Method:

Step 1: Pour oil in a pan and warm it on medium flame. Add mustard seeds, after a few seconds, add garlic, ginger and curry leaves, and fry it well. Add turmeric powder and chili powder and sort it well for a few seconds. Add lemon pieces and salt, mix it nicely.

Step 2: Do not cover with a lid. Switch off the flame. Add vinegar and mix it well. You are able to preserve Vitamin C, as you are not cooking the lemon slices.

Step 2: Let it cooked for a few minutes, in between stir it well. Do not cover with a lid. Switch off the flame. Add vinegar and mix it well.
