Sweet puff pastry hearts
Preparation time- 10 mins
Cooking time-  20 mins 
Total time- 30 mins

Ingredients :
  1. Refined flour-250gm
  2. Butter-100gm
  3. Salt-1/2 Tsp
  4. Ice water-1 cup
  5. Sugar-100gm
Method:
Step 1: In a bowl, strain refined powder and salt. Add 20 gm of butter, knead it well with ice water. Make a square block, cover with a plastic paper and keep it in the freezer for 20 minutes.

Step 2: Take butter (80gm), add two tablespoons of refined flour and make a square block, cover with a plastic paper and keep it in the freezer for 20 minutes.

Step 3: Keep flour dough block on a flat surface, spread it as the square sheet, keep butter block on center and cover with four sides of flour sheet. Keep it in the freezer for 20 minutes. After 20 minutes, spread as the square sheet, fold it to three layers and keep it in the freezer after covering with the plastic sheet. Repeat the step four times. Now, the pastry sheet is ready for baking.
Step 4: Take the pastry sheets, sprinkle sugar, fold it and wrap with a plastic paper and keep it in the freezer for 20 minutes (as shown in the picture). Then, cut the pastry sheets vertically, keep it on the baking tray, wash with egg yolk and sprinkle sugar. Preheat the oven and bake it got 200 degrees Celcius for 15-20 minutes.

    Apple green velvet cake

    Ingredients :
    1. Corn flour-2 Tsp
    2. All purpose flour/Maida- 1 cup
    3. Baking powder-1 Tsp
    4. Salt-1/2 Tsp
    5. Egg-3 no.
    6. Powdered sugar- 1 cup
    7. Vanilla/Apple essence-1 tsp
    8. Apple green color- 1 pinch
    9. Butter- 20 gm
    10. Milk- 2 Tsp
    Method:
    Step 1: Take maida, corn flour, baking powder and salt in a strainer, sift it two times and keep it aside.

    Step 2: Take three eggs and powdered sugar in a bowl, stir it well and double boil it until the sugar dissolves. Using handheld electric beater, beat it continuously till the mixture turns into a thick paste. Then, add vanilla essence and mix it well with the beater.

    Step 3: Take butter and milk in a bowl and heat it in microwave mode at 540 F for 2 minutes and allow it to cool.

    Step 4: Add sifted flour and melted butter into beaten mixture. Fold it gently with a wooden spatula. Take cake pan, apply butter liberally and dust it with maida and spread butter paper. Divide the batter into two portions and add green color into it. First, pour a little amount of the main batter, then pour colored batter and, continue the same. You will get rings as shown in the picture.  Pour the entire mixture into the cake pan and tap it on both sides to expel the air bubbles.

    Step 5: Preheat the oven to 180 Degree Celsius and bake the cake in conventional mode at 180 Degree Celsius for 20 minutes. After 20 minutes, insert a long stick into the baked cake and withdraw it. If the stick is sticky, you have to bake it for another 5-10 minutes.

    Step 6: Take the pan from oven and allow it to cool. Then, take three tablespoons of ice water, add honey and sugar and mix it well. Sprinkle this solution with a brush.
     
    This cake is very soft and even if you keep it in a refrigerator for 2-3 days, still it will be very soft....really!!
    Suggestions

    • Not suggested for children, as it contains food color. Many researches have been linked with cancer and food coloring agents

    • Not suggested for pregnant women, as it contains food color and it affects the baby in the uterus.

      • Not suggested for breastfeeding women, as it contains food color and it passes to the baby through breast milk.

        Preparation of articles
        Articles needed are:
        1. Cooking bowl-1
        2. Cooking spoon-1
        3. Feeding bowl-1 
        4. Feeding spoon-1 
        5. Big pan-1
        6. Covering lids-3
        7. Mixer grinder jar-1 (Only for baby)
        8. Scrubber-1 
        • Keep all articles separately for the baby and do not use for other purposes. (Rationale- To prevent bacterial contamination)
        • Wash all articles with tap water and soap. Take drinking water in a big pan, put all the articles (except scrubber) and boil it for five minutes by covering with a lid. After 10 minutes, you can take it for cooking. Use this method at early morning and do not skip this method to prevent further infections for the baby.
        • Mixer grinder jar is the best source of bacterial growth, so that mother should clean it well. Take the white paper, dish wash solution and 50 ml of water in the grinder, grind it for 1 minute and wash it very well (do it weekly) (Rationale- To remove food stain and dirt). Then, pour boiling water and cover it with lid for ten minutes (do it early morning every day) (Rationale- To kill bacteria completely). And keep it dry.
        Preparation of apple rice porridge
        1. Sliced apple (1 no.)- 10 pieces 
        2. Cooked rice (freshly cooked)- 5 tsp
        3. Drinking water-100 ml
        Method:
        Wash hands with soap and water.
        In a bowl, take sliced apple, cooked rice and water. Then, keep on low flame and cook it for 10 minutes. Keep it covered with a lid for another five minutes to cook it very well. Take cooked apple and rice in a jar and grind it by adding water as needed. 
        How to cool the porridge (Double cooling method): (Rationale- To prevent bacterial growth)
        Take water in a big bowl and keep the cooking bowl in water. Stir it continuously. This step is crucial for rapid cooling to prevent bacterial growth. Feed the baby immediately, when the porridge is lukewarm.
        Preferred feeding time: 7-8 pm
        The position of the baby:
        Wash hands with soap and water.
        I have tried many positions including sitting positions, but I am not able to feed the full amount of food.
        Best position is- Make mother sit on a floor with supported back and stretched legs. Keep the baby on your legs and head of the baby facing towards your legs. So that you can get a control on face and arms of the baby. Keep the head of the baby slightly elevated.
        How to feed the baby: Give a spoon of food and allow ample time for the baby to swallow it. If the baby does not open the mouth, give a mild pressure on one side of the cheek and give food. You can feed the full amount of food by keeping the baby engaged with toys. Avoid the third person with you otherwise, you and baby might be distracted.
        It is essential to expel the gas from the stomach to prevent vomiting for the baby. After a few spoons of feeding, make the baby to sit and gently pat on the back from bottom to top, till you hear the 'burp' sound. 
        To be noted: While feeding the baby, make sure that food should not spill over the nose and eyes. If it is spilled on the nose, gently wipe the food with a towel. If it is spilled on eyes, immediately wash the eyes until the baby is comfortable.
        Aftercare of the baby: Keep the baby in the same position for at least 10 minutes in order to prevent projectile vomiting. Wash the face with clean water and dry with a towel.
        Aftercare of the articles: After feeding, immediately wash the articles with the soapy solution and rinse it very well and, keep it for dry till the next feeding to prevent bacterial growth.

        To be noted: 
        • Watch the stools of the baby for any color change and you can see the level of digestion of food. 
        • Do not compromise on cleaning and hygiene of the food, otherwise, you have to see the little one is suffering from infections.
        • Continue breast feeding along with solid foods.

        Instant cereal (ragi and wheat) porridge for babies 7-12 months old
        (Please continue exclusive breast feeding and you should never feed a single drop of water to the baby till 06 months of age)
        Here, I have posted a instant porridge powder for babies to feed with warm water while traveling. Packaged instant powder causes indigestion and constipation for the babies. Instead of depending on this, you can prepare home made, healthy and weight gaining powder at home.

        Preparation of articles
        Articles needed are:
        1. Bowl-1
        2. Baking tray-1
        3. Airtight container-1 
        4. Cooking bowl-1
        5. Spoon-1
        6. Mixer grinder jar-1
        • Wash all articles with tap water and soap.Then, again wash with boiled water and get it dry.
        • Mixer grinder jar is the best source of bacterial growth, so that mother should clean it well. Take the white paper, dish wash solution and 50 ml of water in the grinder, grind it for 1 minute and wash it very well (Rationale- To remove food stain and dirt). Then, pour boiling water and cover it with lid for ten minutes (Rationale- To kill bacteria completely). And keep it dry.
        Preparation of dough for powder
        1. Ragi flour- 100 gm
        2. Wheat flour-100gm
        3. Refined flour-50 gm (a small amount to stabilize the dough)
        4. Butter-50gm
        5. Brown sugar-100gm
        Method:
        Wash hands with soap and water.
        In a bowl, take all powders, mix it well and keep it aside. Take a cooking bowl, add butter and brown sugar and keep it on the very low flame. Stir it continuously until brown sugar dissolves very well.
        Pour this solution into mixed flour and make a dough with a cleaned hand. Knead it for five minutes. Then, you can shape the dough into different forms and keep it in an airtight container. Keep it the freezer for overnight.
        Next day morning, you can transfer it to a baking tray and bake it in 200-degree Celsius for 20-25 minutes. Make sure that it should not get burned.
        After baking, allow it to cool and you can transfer it to a cleaned mixer grinder and make a fine powder. If you need, you can mix it with infant milk formula powder in equal amounts.
        You can store it at room temperature for a week and in the fridge for a month.

        If you do not have oven, you can prepare cookies with a pressure cooker. Take a cleaned pressure cooker, keep a rack and place tray with biscuits on top of it. Cover with lid with out nozzle.  Switch on the stove to medium flame and keep it for 30 minutes.

        To be noted: While traveling, you can mix it with warm water and can give it to baby.
        Do not compromise on cleaning and hygiene of the food, otherwise, you have to see the little one is suffering from the infection.

        Instant cereal biscuits for young children/toddlers
        I used to see that while traveling, the mothers give biscuits to their children when they are hungry. It is to be noted that biscuits are made up of mainly refined flour (Maida) and baking powder. Refined flour causes severe constipation and baking powder alters acidic level in the stomach of babies. Here, I have posted varieties of healthy home made cookies for your babies.

        Preparation of articles
        Articles needed are:
        1. Bowl-1
        2. Baking tray-1
        3. Airtight container-1 
        4. Cooking bowl-1
        5. Spoon-1
        • Wash all articles with tap water and soap.Then, again wash with boiled water and get it dry.

        Lunch box- Onion rice, ladies finger stir fry and fish pickle
        Preparation time- 10 mins
        Cooking time-  20mins 
        Total time- 30 mins

        Ingredients for onion rice:
        1. Cooked white rice-1 cup
        2. Finely chopped onion (Shallots)- 50 gm
        3. Oil- 2 tsp
        4. Mustard seeds- 1/2 tsp
        5. Chili powder- 1 tsp
        6. Salt- as needed 
        7. Curry leaves-as needed 
        Method:

        Step 1: Pour oil in a pan and warm it on medium flame. Add mustard seeds, after a few seconds, add chopped onion,  curry leaves, chili powder and salt, and stir it well. Let it cooked for a few minutes.

        Add cooked rice and mix it well. Switch off the flame and allow it to cool. 

        Ingredients for ladies finger fry:
        1. Chopped ladies finger-1 cup
        2. Finely chopped onion- 50 gm
        3. Oil- 2 tsp
        4. Mustard seeds- 1/2 tsp
        5. Turmeric powder- 1/2 tsp
        6. Chili powder- 1 no.
        7. Salt- as needed 
        8. Curry leaves-as needed 
        Method:

        Step 1: Pour oil in a pan and warm it on medium flame. Add mustard seeds, after a few seconds, add chopped onion, ladies finger, chili powder, curry leaves, turmeric powder and salt, and stir it well. Do not cover with a lid and let it get fried in the opened pan.  You stir in between well and make sure that it should not get burned. When it's get fried, switch off the flame and allow it to cool. 

        Tips and warnings
        • Do not pack warm foods in lunch box.
        • Put all vegetables including onion and green chili in the water for 1 hour for dilution of pesticides. 
        • For easy peeling of ginger, garlic and onion, soak it water for a few minutes. 
        • You can chop all vegetables and keep it in an air tight container in the fridge in the night for next day lunch. You can peel onion, garlic, ginger and keep it the fridge too. Do not slice it.

        Ingredients :

        1. Egg-1 no.
        2. Chopped onion-half
        3. Sliced chili- half
        4. Curry leaves- as needed
        5. Turmeric powder- 1 pinch
        6. Pepper powder-1/2 tsp (optional)  
        7. Salt- as needed
        8. Oil- 1tsp
        Method:

        Step 1: Take a bowl, put sliced onion, chili, curry leaves, turmeric powder, pepper powder and salt, and mix it well. Add egg and mix it very well.

        Step 2: Take a frying pan, warm it on medium flame and spread oil. After a few minutes, pour egg mixture and rotate the pan to spread egg evenly. Then, flip the omelette and take out from the pan after a few minutes.
